Elgin is the coolest wine-growing appellation in South Africa, with an average summer daytime temperature of 28 °C, making it ideal for crafting stellar Sauvignon Blanc. The soils of this vineyard on our Helderfontein farm—one of our two farms—are a mixture of soft Table Mountain shale and sandstone. Enough dappled sunlight reaches the beautifully large, well-managed canopies to ensure high concentration of fruit flavours in the grapes. The cool climate and gradual ripening deliver high natural acidity with very low pH.

We hand-harvest at 23 °B—much later than any other wine-growing area! The grapes receive four hours of skin contact after destemming, followed by settling at 6 °C for two days. After racking, natural fermentation begins. We inoculate with a selected French yeast only after 14 °B has been fermented by wild yeasts, ensuring a clean finish. Fermentation is long and slow at 12 °C. The wine rests for two months on the lees before bottling at the end of May.
